CHIPOTLE COCKTAIL SAUCE

MAKES ABOUT 1 CUP

1 cup ketchup

1 tablespoon prepared horseradish

1 chipotle pepper packed in adobo sauce, minced

1 tablespoon adobo sauce

Juice of ½ lemon

Kosher salt and freshly ground black pepper

Combine all the ingredients in a medium bowl.

Nachos fit the bill, and this Neely’s Bar-B-Que version has been a signature dish in our restaurants for over 20 years. Smoked brisket, pulled pork, or store-bought rotisserie chicken—they all work just fine. And for you non–meat eaters, grilled vegetables work as well! SERVES 6 TO 8
